The premier wine of Domaine Faverot, this full-bodied red wine is an equal blend of 45% Grenache, 45% Syrah and 10% Mourvèdre. With a deep crimson color, it has a very complex spicy nose, exhibiting hints of game and black truffles. It greets the palate with rich, powerful notes of ripe cherries and blackberries mixed with ripe tannins. The finish on this wine is long and full and it is capable of cellaring for up to ten years.
The grapes are hand-harvested and de-stemmed at the winery and then cold-macerated for about 3 to 4 days. The temperature-controlled fermentation is allowed to begin naturally and a further period of maceration takes place following fermentation. After racking the wine is aged for about one year in a mixture of oak barrels and old oak foudres. |
