Low yields of 35 hl/ha. Hand picked and hand sorted. Once grapes have arrived at the cellar, they are taken to a destemmer. They are cooled to 10 degrees Celsius (50 deg.F) and drained. That first juice, unpressed, is the "Jus de Goutte" and is fermented separately. Remainder grapes are then pressed and fermented in thermo-regulated vats between 16 and 18 degrees Celsius (60-65 deg.F). Wines are then blended and filtered during winter. This subtle balance of juices brings freshness, roundness and fineness, with good persistence.

F) and taken to pneumatic presses, ensuring a soft and progressive pressing, preserving the delicacy of the harvest. Fermentation is in thermo-regulated vats between 16 and 18 degrees Celsius (60-65 deg. F).

This vineyard is located in the Bandol appellation but it cannot gain AOP until the 5th leaf. The wine has been elaborated in opposition to usual standards for a rose. Harvested very early in the season to enhance natural acidity and low alcohol, these very young vines of Mourvedre and Cinsault have been farmed in harmony and in respect of Mother Nature. A natural pink color, minimum sulfur doses, indigenous yeasts naturally brought by wild flowers in the vineyard, malolactic fermentation and a very light filtration eventually make our first harvest of only 200 cases “Non-Conformist”.

After alcoholic fermentation the wine is aged for 4-6 months  in a  big barrel (foudre) of French oak.

Lagremas d'Aur means 'Tears of Gold' in Occitan, the ancient language of Languedoc.  This is s sweetie from Rives-Blanques, a truly delicious, delectable "curiosity" of their range. Made from chenin blanc harvested in October 2006 and mauzac harvested in November 2006, the grapes were picked at exactly the point where their naturally concentrated sugars were perfectly balanced by natural freshness. 

Because the Limoux appellation does not allow for naturally sweet wines made from these grape varieties, “Lagremas d'Aur" has to be labelled as a “Vin de France”, the lowest category in the pecking order of French wines. It was fermented and aged for three years in seasoned French oak barrels, and then aged another year in the bottle.
