 Cassis Bodin

Nestled into the coast, tucked behind the Provençal hills famously painted by Cézanne and Van Gogh, is the seaside town of Cassis. As if this quintessential French seaboard town could be any more brilliant, it is also a wine appellation, producing mostly fine rosé and white wines perfectly fitted for sipping while your toes are in the sand and a coastal breeze is blowing through your hair, watching vibrant sails bobbing on the horizon.

One of the first vineyards to be re-established in Cassis after the phylloxera epidemic, the Château de Fontblanche was founded in the early 20th century by Emile Bodin. Bodin was a close friend of Frédéric Mistral, who dedicated a flowery poem to the wines of Cassis ("Even the bee's honey is not sweeter").  Cassis was the first Appellation d’Origine Contrôlée in France,  declared on 15 May 1936.

Low yields of 35 hl/ha. Hand picked and hand sorted. Once grapes have arrived at the cellar, they are taken to a destemmer. They are cooled to 10 degrees Celsius (50 deg.F) and drained. That first juice, unpressed, is the "Jus de Goutte" and is fermented separately. Remainder grapes are then pressed and fermented in thermo-regulated vats between 16 and 18 degrees Celsius (60-65 deg.F). Wines are then blended and filtered during winter. This subtle balance of juices brings freshness, roundness and fineness, with good persistence.

The Gamay grapes are grown in the steep slopes of the mountainside, in an ideal position for best sun exposure.”Méthode Ancestrale”- a partial fermentation at low temperature in vats results in a wine with a low alcohol level. The wine, clarified by filtration, retains its yeasts in order to continue its natural fermentation in the bottle. This causes the mousse to form. After removal of the deposit, the bottles are finally sealed.
