Bodin Jus de Goutte Blanc 2016 (#69-1)

Low yields of 35 hl/ha. Hand picked and hand sorted. Once grapes have arrived at the cellar, they are taken to a destemmer. They are cooled to 10 degrees Celsius (50 deg.F) and drained. That first juice, unpressed, is the "Jus de Goutte" and is fermented separately. Remainder grapes are then pressed and fermented in thermo-regulated vats between 16 and 18 degrees Celsius (60-65 deg.F). Wines are then blended and filtered during winter. This subtle balance of juices brings freshness, roundness and fineness, with good persistence.
