The Languedoc-Roussillon area is one of the largest expanses of vine-growing areas in the world and stretches for 120 miles along the Mediterranean coast. There are approximately 750,000 acres (300,000 hectares) of southern France included in the Languedoc, from the Rh“ne River to the Spanish border and the Pyr‚n‚es and producing one-third of all French wine. The area produces mainly full- and medium-bodied red wines, light and dry ros‚s and an assortment of dry, sweet and sparkling white wines. The principal grapes are the Carignan, Grenache, MourvŠdre, Cinsault and Syrah. Most of the wines are "Vin de Pays", country wines, and are perfect as "everyday" wines.

Careful blending of the best barrels by the celebrated Georges Pauli gave Rives-Blanques the first hint of the magic they had spent years trying to conjure: a wine that is elegant, complex, intellectually challenging and sophisticated, yet startlingly simple in its clarity. Every year presents a new challenge, and it is not at all certain that every vintage will allow Rives-Blanques to make the exceptional wine they strive for. Nor do they strive to make the same wine every year: the aim is to get the best out of each vintage. Yield between 35-45 hl/ha. Each grape variety vinified separately. Grapes picked and twice-sorted by hand, pressed within two hours of harvesting. Fermented and aged in French oak barrels for six months, with batonnage twice weekly.

Rives-Blanques Blanquette de Limoux NV (#35-1)

The world's oldest sparkler is still made to this very day only in Limoux, under the strictest AOP rules. It has the lowest permitted maximum yield of any sparkling wine in Frane, and is made exclusively from hand-harvested grapes. Whole, unblemished grapes are pressed within two hours of harvesting. Each grape variety is vinified separately and fermented at 14 °C. in stainless steel vats with a second fermentation in the bottle. Yield: 45 hl/ha.

Rives-Blanques Cremant Rosé (#35-2)

Limoux has an enviable reputation for the quality of its sparkling wines: as far back to the 16th century. The latest newcomer to the region is Crémant de Limoux, which like Champagne, is based largely on Chardonnay. This sparkling rosé is fresh in the mouth and on the nose with hints of raspberry & strawberry. Delicate, dry and elegant with fine bubbles.

Rives-Blanques Dédicace Blanc 2008 (#35-4)

An exceptional wine especially in a region not known for its chenin blanc. Dédicace has been made with great dedication from 35 year old vines: it is a "modern style of wine", made with all the care and experience that is rooted deep in tradition. Possibly the only chenin blanc with appellation status in the whole of the South of France, it has distinguished itself as one of the most interesting white wines of the region. Whole, unblemished grapes harvested by hand and then individually sorted again by hand before pressing; pressed within two hours of harvesting. Fermented and matured for six months in 8% new French oak barrels. Yield: 40 hl/ha.

The Le Limoux is the classic Limoux blend of Chardonnay, Chenin Blanc and Mauzac. This wine expresses hints of apple, pear, peach, citrus, and possibly a bit of banana. Picked and sorted by hand this wine is fermented in oak barrels.

Made from 100% Mauzac, a grape grown in this region dating back to the Renaissance, the harvest is pressed within two hours of picking. The wine is matured for six months in seasoned French oak barrels. Awarded 4 stars by the British magazine Decanter, Occitania has been rated one of the top wines in France for each of the last four years.

Rives-Blanques award-winning Cuvée de l'Odyssée, used only hand-selected grapes from top fields of Chardonnay, arguably amongst the best in Limoux, and proof positive that the great white grape varieties can find their full expression here. Rives-Blanques VdP Chardonnay 2011 (#35-11)

Rightly dubbed as the 'Basic Beauty' of the Rives-Blanques stable, this is a clean, fresh and stylish chardonnay, vinified in stainless steel vats. The winemakers take as much pride in the quality this country wine Vin de Pays as they do in their flagship chardonnay, the Cuvée de l'Odyssée. It was selected by one of the best sommeliers in the World, Andreas Larsson, as one of the top white Vins de Pays d'Oc. Machine harvested at night, sorted by hand and pressed within two hours of harvesting. Fermented at 17°C in stainless steel vats.
